What we now know is that well-made whites protected from oxygen under screw cap take on deeper colours very slowly, not dramatically as they do under cork. The limited colour spectrum from youngest to oldest wine in the tasting mirrored the subtle shifts of aroma and flavour attributable to age. Yes, the wines changed with age, but in pleasing ways, combining freshness with bottle-aged character.
